An Evening at Byakko

At Byakko, the Japanese restaurant at Six Senses Crans-Montana, there is just one step from a dinner for two or with friends in a plush setting to a festive atmosphere on the dance floor.

Head for the snow-capped peaks of the Japanese Alps, several thousand kilometers from the Valais, for a trip to rouse all your senses. At Byakko, escapism unfurls from the very first moment, even before stepping through the doors. A delicate fragrance of cedar wafts in the air while the shadow of a mysterious white tiger appears in the entrance. Tonight, you have an appointment with the legendary Byakko, one of the four mythological creatures in Japanese constellations.

Immersion continues in the dining-room where the spirit of the celestial tiger reigns supreme. In a plush setting with subdued lighting, traditional fabrics in reddish tones are accompanied by noble materials and majestic bonsai plants, giving a warm, refined atmosphere. Once seated at table, discover the menu composed by Chef David Khemphone proposing, as well as a 7-course Omakase menu, an array of traditional dishes designed for sharing. Obsiblue shrimp tempura, Sashimi of Wagyu beef, Uramaki of royal crab, grilled Black Cod, Robata of barbecued beef fillet, Spinach Salad with lobster and truffle… Classics of Japanese gastronomy retweaked for a contemporary touch are relished against a background of lounge music.

The meal then ends with dessert: Cheesecake with Genmaicha tea, Kanten with yuzu, Mochi Matcha and black sesame Ice-cream, all perfecting the gustatory experience. Then suddenly, a roar is heard. It is 10 p.m. precisely, you hear a gong, and the ambiance takes a totally new turn, announcing the start of a memorable night. A DJ appears and transforms the room into a dance floor. The chance to prolong your dining by heading for the restaurant's elegant bar, letting yourself be tempted by saké rice wine or a signature cocktail, then being carried away by the music and – why not? – dancing late into the night. Between tradition and modernity, Byakko celebrates Japanese conviviality at the heart of the Valaisan Alps.
